When I was a kid I got up in the morning for pancakes that were crispy around the edges. I had to drive six hours home to get them! I have made hundreds of pancakes before I realized the secret. Though simple, I never tried it for myself until recently. I can make them well, yet they pale in comparison to my mothers.

So we take note which ones we put in our body. Fats have gotten a bad reputation over the years as the artery clogging nutrient. Studies prove that a diet high in fat is better for weigh loss than a diet high in carbs.
What happens here is like any type of frying. Only instead of immersing something in oil you expose the extremities. This allows you to have the fried food taste without overdoing it. How to make it crispy
Pour a tablespoon of oil into the center of the pan. Your pan and oven must be completely level or you have to do some extra work.
Pour the batter in the center of the oil, it should surround the pancake as the batter spreads. If it only makes it to half of the pancake only that part will be crispy.
*If the oil does not completely surround the pancake wait fifteen seconds. Then tilt the pan to move the oil around the edges.
Cook like normal then once it’s bubblin’ you can flip it and you’re on your way to crispy pancake heaven.
